CRAWFISH MONICA

GROCERY LIST:

  • 1 stick butter
  • 1 bell pepper (diced)
  • 1 Anaheim pepper (if you can find them)
  • 1 yellow onion (diced)
  • 1 splash white whine
  • 2 cups half & half
  • Cajun seasoning
  • Cooked crawfish tails 
  • 1 package of rotini noodles
  • Fresh chopped parsley
  • Parmesan cheese
  • Dash of Better than Bouillon (Lobster if available)

INSTRUCTIONS:

  • Melt a stick of butter down on medium/low heat
  • Raise the heat to medium, then sauté peppers and onions, adding Cajun seasoning
  • When the peppers are tender and the onions are translucent, add a splash of white wine to deglaze, and cook down for a few minutes
  • Add 2 cups half & half and stir until combined
  • Add cooked crawfish tails and better than bouillon
  • Bring to a boil
  • Add in cooked rotini noodles
  • Top with fresh parsley and Parmesan cheese
