SMOKED BOLOGNA

GROCERY LIST:

  • 1 Tube Bologna
  • Mustard
  • Cajun Seasoning (I like Meat Church Holy Voodoo)
  • Lewis Bake Shop Texas Toast
  • American Cheese

INSTRUCTIONS:

  • Set your smoker to 250 degrees
  • Score the bologna tube in a cross-cut method that will give you approximately 1×1 squares
  • Slather your bologna tube with mustard as a binder, then season heavily with your Cajun seasoning
    • Let it adhere for at least 15 minutes – I like to go start my smoker during this
  • Let it roll on the smoker until you get the color you like, then take it off. Usually about 2.5 hours.
  • Start a griddle or a cast iron skillet on high heat with BaconUp or a high smoke point oil, then slice your bologna and sear it on each side, adding your American cheese to let it melt.
  • You can toast your Texas Toast in a little knob of butter on the griddle too if you like that.
  • Build your sandwich. I like lightly toasted bread with yellow mustard. My dad is strictly soft bread, mustard and diced white onion. Build it how you like it!
