CHOPPED CHEESE

GROCERY LIST:

FOR THE SAUCE:

  • 1 Tomato (Diced)
  • A few Grillo’s Pickles (Diced) with a splash of pickle juice
  • 1 Jalepeno (Diced and deseeded)
  • A few handfuls of iceberg lettuce (chopped)
  • Ketchup
  • Mayonnaise
  • Mustard
  • Worshteshire Sauce
  • Cajun Seasoning

FOR THE CHOPPED CHEESE:

  • Butter
  • 1/2 white onion (diced)
  • 1 poblano pepper
  • Bacon
  • Burger patties
  • Freshly grated pepperjack and cheddar cheese
  • Sub bun of your choice

INSTRUCTIONS:

  • Combine all sauce ingredients in a bowl, cover and let sit in the fridge to cool
  • Fry bacon in a cast iron or on a griddle, then set aside (finely chop when it cools down)
  • Add a little butter, sauté onion and poblano, then remove them
  • Season burgers with your choice of rub, then smash them down
  • Cook them through, add the bacon, peppers and onions, then get to chopping
  • Add your cheese, then cover to let it melt
    • If you grate it off the block it melts better
  • Add the mixture to your sub bun, then top with the cold sauce mixture
  • I like to wrap mine in aluminum foil, then put it in the oven for a minute to let it steam up.
  • Crack a beer and enjoy!
