LEMON BUTTER PASTA W/ BASIL OIL

Quick hitter – 30 minutes tops. Super light and really good.

GROCERY LIST:

  • Linguine
  • 1 stick of butter
  • 1 lemon (You’ll need the zest and juice)
  • Olive Oil
  • Fresh Basil
  • (OPTIONAL): I like to pan sear a butterflied chicken breast with lemon pepper seasoning

INSTRUCTIONS:

  • Combine a handful of basil with olive oil in a food processor and blend until smooth
  • Melt a stick of butter in a sauce pan over low heat, adding the zest and juice of one lemon
  • Boil pasta to al dente
  • Add pasta and a splash of pasta water to your sauce, then toss
  • Top with basil oil and fresh basil
  • (OPTIONAL): Top with seared chicken
